I had never mentioned, But cooking is something that i have always loved doing as a child,And i still remember the days when i used give a helping hand to my mom in the kitchen and literally taking control over the kitchen .Many times i felt like i cooked the whole dish even if it was just adding salt to the food.It makes my laugh when i remember those days.
I never realized that my cooking skills had grown with me unless i was told by my family and friends that there is something in my food that makes them want to eat more with a big smile.
Everybody loves eating and cooking and every cook is different in their style of cooking.So here i am to share my style of cooking and share my love for cooking to all of you. Njoy..

Spinach Chicken curry !!!
It was of very cold and freezing day, It was about lunch time and i started craving for food.Looking at the window day dreaming and trying to think what best i can cook to change my low laid back mood to exciting and happy.
I wanted to cook something that is not very spicy yet yummy, nothing too complicated yet delicious so.... Checked in my refrigerator and found some chicken and spinach so Spinach chicken curry flashed in my mind .Spinach is a very comforting food and good for health and chicken is best for nutrition and its best to have something homemade to change your mood.
Ingredients.
2 cloves garlic, peeled and finely chopped
1 large shallot or 1 small onion,
1 large tomato finely chopped
1 tsp cumin seeds
1 heaped tsp turmeric
1 tsp garam masala
1 tsp coriander powder
3-4 green chillis
2 Cloves
1 small stick Cinnamon
4-5 tablespoon of yogurt/cream
Spinach 250 grams
chicken 1/2 kilo.
And of course Salt.
Make a coarse / Fine paste of the following
1 onion
3-4 green chillis
6-7 cashewnuts
spinach
Method.
Before cooking as always wash the chicken and keep them aside and let them meditate till they are used.I mean really they can meditate too !!
Now Jump straight into cooking,
Place a pot/ Pan on to stove and keep them on Low/ Medium Heat.

Method.

Now start adding ingredients one by one,
First add Cumins seeds,
Cinnamon stick,
2-3 garlic cloves.
Now add chopped onions and wait for them to be slightly brown (You can allow them to become more golden brown but remember then more they caramelize the sweeter they become)
Add the Chicken, i used chicken drumstick, absolutely love them.
Allow them to fry for a while until you see the chicken turn white in colour.
Now add tomatoes and add all the spices garam masala powder,turmeric powder,coriander powder, Allow them to cook for about 3 minutes .
Finally add the spinach Paste that we made earlier and mix well.Leave them to cook for a minute and finally add Yogurt and salt to taste and cover the lid and cook in low flame for about 10 mins, check if the chicken is cooked (Chicken must fall off the bone).
